Zucchini! A Season to Remember a Rose !

 (NIV) 2 Timothy 1:5

I am reminded of your sincere faith, which first lived in your grandmother Lois and in your mother Eunice and, I am persuaded, now lives in you.

It’s almost the time of year when the zucchini begins to grow and become prolific! This is the season when those who have zucchini plants begin to share their zucchini anywhere we can because that little plant just abounds with zucchini. We start cooking those zucchini with the recipes we know and are familiar with; zucchini bread, zucchini pizza, zucchini boats and so on. Then we begin reaching for new recipes to use up that beautiful and abundant vegetable. Maybe fried zucchini or even a zucchini and tomato sauce? Whatever you choose to make I am pretty certain that the zucchini will outlive your list of recipes!

My husband likes to cook and will often reach back into his childhood and his grandmother’s recipes. The other day, he said, I am going to make my grandma’s zucchini soup!” He was cooking, I was eating, perfect. I said great, go for it. First he put on ‘grandma’s apron. This is not really her apron, but it is made from a plaid that is the exact plaid of an apron she wore. When he had to get rid of a shirt made of the same pattern I told him to make it into an apron. You see it above in the photo.

He made a very tasty soup! It was not difficult, and everything was in the house already. I did not know what prompted him to suddenly make this, but, I began to question him about his grandmother. She was his Mom’s mother and she lived with them for a while. She was from Italy-first generation. These people knew how to stretch their food and produce to the max. I guess after so many zucchini, and so many recipes you begin to experiment, and I believe this soup was the result.

My husband was only eight when his grandma Rose passed away, his Mom continued to make the soup for her family, and now my husband makes it for his family. A recipe is a great way to ‘pass a heritage’ on to the next generation. An even better thing grandma Rose passed on to her family-was her faith! Grandma Rose always went to church and served the Lord. Even in her broken English, she sang and worshiped God with all her strength. She passed her love of God on to her daughter Margaret, my husband’s Mom, as well as her nine other children. Margaret was always faithful to the Lord, and to sharing her faith with her three sons. One, is my husband. I am thankful for her for that!

In II Timothy we see the Biblical example of this process of ‘passing down our faith’. In this age when parents seem to be questioning what is right or wrong, it is enlightening to know there was a generation that taught truth, lived truth, and shared truth with others. Let’s be that generation again! Be the generation that takes our children to church-not SEND them. Be the generation that lives the 10 commandments, not ‘do as I say not as I do’. Children live what they learn in the home. So, I promised you ‘grandma Rose’s zucchini soup recipe’, and here it is. Remember to say a prayer of thanks to God before you eat it, and share your zucchini crop with others when you have it after. By the way, we don’t grow zucchini! wink

GRANDMA ROSE’S ZUCCHINI SOUP

Saute’ an onion, 2 garlic cloves and a fresh zucchini from the garden.

Add a fresh diced tomato (skins removed) salt, pepper and parsley.

Add 2-3 cups of water and cook till tender.

When done, beat an egg with a tablespoon of grated cheese and add to the soup mix.

Stir until the egg cooked and enjoy!

Serve with crusty Italian bread for a summer feast!
